Since many of these dishes are pretty basic, I haven't included measurements. Just eyeball and flavor it according to your tastes.
Tomato and Feta Salad ​

Ingredients: Tomatoes, feta cheese, red onion, olives, olive oil, oregano. Alternately you can even make it with just tomatoes, feta and fresh ripped basil leaves, adding a drizzle of olive oil.

Instructions: Chop tomatoes and place them in a bowl. Crumble feta cheese over the tomatoes, add thinly sliced red onion and olives. Drizzle with olive oil and sprinkle with oregano.
Tzatziki Dip with Crudités​

Ingredients: Greek yogurt, cucumber, garlic, olive oil, lemon juice, dill (or not - this is a matter of heated debate. Do what you like), salt, pepper, pita and assorted fresh vegetables (carrots, bell peppers, celery, etc.)
- Instructions: Grate the cucumber and squeeze out excess moisture. Mix the Greek yogurt with grated cucumber, minced garlic, olive oil, lemon juice, a generous sprinkle of chopped dill (optional), salt, and pepper. Serve with a variety of fresh vegetable sticks.

Greek Avocado Toast

Ingredients: Whole grain or crusty village-style bread, avocado, cherry tomatoes, feta cheese, olive oil, oregano

Instructions: Toast the bread slices. Mash avocado and spread it on the toasted bread. Top with halved cherry tomatoes, crumbled feta cheese, a drizzle of olive oil, and a sprinkle of oregano.

Cucumber and Feta Bites

Ingredients: Cucumbers, feta cheese, cherry tomatoes, fresh dill, olive oil

Instructions: Slice cucumbers into thick rounds. Top each cucumber slice with a piece of feta cheese, a cherry tomato half, and a small sprig of dill. Drizzle with olive oil.
Cretan-style Dakos

Ingredients - Barley or other rusks, feta, tomatoes, olive oil, salt and pepper, dried oregano, (optional - capers, finely chopped red onion)

Instructions - Soak rusks for a few minutes in water until they're soft but not breaking apart. Remove and put on a plate. Top the rusk with a generous splash of olive oil, chopped tomatoes and crumbled feta. Add a final drizzle of olive oil, salt and pepper, a pinch of dried oregano and capers and onions, if desired.
Watermelon and Feta Salad

Ingredients: Watermelon, feta cheese, fresh mint leaves (opeional - olive oil, balsamic glaze)

Instructions: Cut watermelon into cubes and place in a bowl. Crumble feta cheese over the watermelon, add torn mint leaves. Drizzle with olive oil and a touch of balsamic glaze if desired.
​Greek Cheese Platter

Ingredients: Assorted Greek cheeses (feta, kasseri, graviera, vlachotyri), olives, dried figs, nuts (walnuts, almonds), honey

Instructions: Arrange the Greek cheeses on a platter. Add olives, dried figs, and nuts. Serve with a small bowl of honey for drizzling over the cheese.
Greek Yogurt with Honey and Walnuts

Ingredients: Greek yogurt, honey, walnuts, cinnamon

Instructions: Spoon Greek yogurt into a bowl. Drizzle with honey, sprinkle with chopped walnuts, and a pinch of cinnamon.
